CROCKPOT CHICKEN ALFREDO & BROCCOLI
This was last night's dinner and it was yummy! You know me, I love a good crock pot meal! If you like an Alfredo base with pasta, this recipe is one for you to try!
I used:
3 chicken breasts
1 can chicken broth (I used low sodium broth)
16 ounces heavy cream
4 ounces cream cheese
2 tablespoons butter
2 teaspoons garlic, minced
1/2 teaspoon black pepper
A pinch of red pepper
1 tablespoon dried basil
16 ounces pasta, prepared (I used Rigatoni)
1 cup Parmesan cheese, grated
12 to 16 ounce bag frozen broccoli florets
Set crockpot on high for four hours. Add chicken, broth, heavy cream, cream cheese, butter, garlic, both peppers and dried basil. Feel free to add salt to this recipe. I leave the salt out when there is cheese in a recipe.
When the crockpot gets to 40 minutes left on the cooking time, shred or dice the cooked chicken breasts and add back to the crockpot. Add pasta, cheese and broccoli florets. Let cook for the remaining 30 minutes and let the crockpot stay on warm until ready to serve. Enjoy!
