MY HEALTHIER CHOCOLATE ZUCCHINI BREAD
Happy Friday, friends! I spent yesterday in my kitchen making this chocolate zucchini bread. It turned out delicious and I wanted to share it with you. My husband could not believe there was zucchini in this bread. I know a lot of you are getting fresh zucchini out of your gardens this time of year. Here's a chance to use them in a different kind of recipe! You will love it!

The ingredients I used:
2 large eggs
1/3 cup honey
4 ounces unsweetened applesauce
1/2 cup calorie free brown sugar
2 teaspoons vanilla extract
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/3 cup dark cocoa
1 2/3 cups all-purpose flour
2 cups unpeeled, shredded zucchini
1 cup chocolate chips
Instructions:
Preheat oven to 350 degrees and lightly grease a loaf pan.
In a large bowl, beat eggs, add honey, applesauce, brown sugar substitute and vanilla. Stir until combined.
Continue mixing in salt, baking soda, baking powder, cocoa, and flour.
Add zucchini and chocolate chips to the mixture and mix well.
Pour batter into loaf pan and depending on your oven, bake for 65 to 75 minutes until a tooth pick inserted comes out clean.
Let cool on a rack before slicing. (I didn't let the loaf cool yesterday before slicing and it was delicious warm!)
