MY TAKE ON A QUICK, HEALTHIER SUMMER SALAD
Hello friends! I hope this post finds you all well. I have missed posting for the last month due to vacations and other family commitments. Now, I hope to be back in a more frequent routine of posting . The summer salad that I am sharing is one that I made to my own liking. You can certainly change it up to your taste buds. Here's my take on this summer salad!
16 ounces of chickpea spaghetti noodles, cooked and drained
2 cucumbers, chopped
3 - 5 spring onions, chopped
1 red pepper, chopped
8 ounces of low calorie, low fat or no fat Italian dressing
2 tablespoons of Italian seasoning
Mix all of the above ingredients together in a large dish and chill before serving. It's even better chilled overnight. Don't hesitate to change the ingredients. For example, I used a red pepper instead of a green, yellow or orange pepper. You may prefer one of those over the red. You may chose to use regular pasta versus chickpea pasta. There are so many ways to make this simple, delicious salad. Enjoy!
