PANKO CRUSTED FLOUNDER
Happy Friday! When I was first married, I could never get past the smell of baking fish in my oven. I would get my husband to take it outside to the grill to cook. In an effort to eat fish more often, I decided to give it another try in the oven. I looked at recipes and then decided to make up my own. It turned out so yummy, so I wanted to share it with you! I used flounder, but you can use any white fish for this recipe. This is what I started with:
4 flounder filets
1 egg, beaten
1/2 lemon
1 cup panko bread crumbs
1/2 cup Parmesan cheese, grated
1 tablespoon dried parsley (you can use fresh)
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried mustard
1/2 teaspoon thyme
Olive oil spray
Sheet pan
Preheat oven to 400 degrees. Add one egg, beaten, in a dish by itself. Mix the panko bread crumbs, parsley, black pepper, garlic powder, onion powder, dried mustard and thyme in another dish. Take each piece of fish and dip it in the egg. Then dredge both sides with the panko mixture. Spray olive oil spray on the sheet pan where you are going to lay the filet. Once all the filets are on the sheet pan, spray the tops with olive oil spray and squeeze the juice from one half lemon on top of them. Bake for 15 minutes or until the coating is golden brown. Garnish with the remaining lemon if you like. Enjoy!
